Scrapple Burgers
1 pound Harry Ochs homemade scrapple
1 chopped red onion
1 chopped green pepper
1 egg
1 TLBS Worcestershire sauce
2 TLBS bread crumbs
Romaine lettuce
Sliced tomato
Ketchup

Sautee onion and peppers in a skillet and let cool. Crumble scrapple in a mixing bowl and add the cooled onion, peppers, egg, Worcestershire sauce and bread crumbs. Mix and shape into patties. Sautee in a preheated medium skilled for 4-5 minutes on each side, then place on a roll and add romaine lettuce, red onion, sliced tomato and ketchup

Scrapple-Apple Dessert
1 lb scrapple, sliced
½ cup bread crumbs
4 Macintosh apples, cored, sliced
¼ cup melted butter
¼ cup brown sugar

Preheat over to 350 degrees
Put layer of sliced apple slices in a 6×10 inch shallow baking dish, greased with butter. Add breadcrumbs to butter. Mix and sprinkle half the breadcrumbs over the apples. Put a layer of scrapple over breadcrumbs and add remaining crumbs. Top with layer of scrapple and apple slices. Sprinkle with brown sugar.
Bake at 350 degrees for about 25-35 minutes.

Yields 4 servings

Scrapple Breakfast Sticks
1 lb scrapple
2 tablespoons milk
1 egg, beaten
1 cup cornflake crumbs

Preheat oven to 400 degrees.
Cut scrapple in inch sticks. Combine egg and milk. Dip scrapple sticks in egg and milk mixture, then in the cornflake crumbs to coat sides. Put in shallow baking pan. Bake at 400 degrees 20 to 25 minutes.

Yields 6 servings
